Soave Superiore joined the official list of typical Italian products with the certification DOCG (denomination of controlled and guaranteed origin) that was released October 29, 2001.
Being a product DOCG certification requires that the entire production process must be carried out in the region of Veneto.
The denomination of controlled and guaranteed origin Soave Superiore is reserved for wines Soave Superiore Classico Superiore Soave and Soave Superiore Riserva.
The production area of ​​the grapes used to produce wine Soave Superiore DOCG includes some municipalities in the Province of Verona.
The types allowed are:
Soave SuperioreSoave Classico Superiore
– Color: pale yellow, sometimes intense with possible green and gold;
– Smell: large, distinctive floral;
– Palate: rich and slightly bitter, aged in wood products in the flavor can be more intense and persistent, with notes of vanilla.
– Minimum alcohol content 12%.
Soave Superiore Riserva
– Color: straw yellow, with possible green and gold;
– Smell: wide, deep with notes of vanilla;
– Flavor: smooth, intense, enveloping with a bitter note in the finish, aged in wood products may also present notes of vanilla;
– Minimum alcohol content 12.5%.
– Garganega: at least 70%;
– Trebbiano di Soave (ours) and Chardonnay: maximum 30%;
– In this context the 30% may also contribute, up to a maximum of 5%, grapes from white grapes, non-aromatic, suitable for cultivation in the Province of Verona.
Serving temperature: around 10 ° C – 12 ° C.
Serving suggestions: ideal with soups and seasonal vegetables, excellent with fish and rice dishes. In particular with snails, locally called “bogoni”, with oysters, both raw and baked with smelts and salmon.
