Caciotta of Urbino joined the official list of typical Italian products with the certification PDO (protected designation of origin) which was issued on 21 June 1996.
Being a product PDO certification requires that the entire production process must be carried out in the Marche region.
The real Casciotta d’Urbino PDO is produced exclusively in the territory of the province of Pesaro-Urbino, according dairy techniques of ancient roots, established over the centuries, rigidly regulated.
The Casciotta d’Urbino PDO is fat cheese, partially cooked, made with whole sheep’s milk in varying degrees from a low of 70% to a maximum of 80%, and whole cow’s milk for the remaining 20-30% from two daily milkings. The milk is coagulated at a temperature of approximately 35 ° C with liquid rennet and / or powder. The cheese is subjected to a manual pressing with characteristic technique, in suitable molds.
Salting is carried out dry, or alternating the brine to dry salting. The maturation period is estimated at 20-30 days at a room temperature of 10-14 ° C and with a humidity of 80-90%.
