The Brown of Castel del Rio joined the official list of typical Italian products with the certification PGI (protected geographical indication) that was released July 2, 1996.
Being a product of PGI certification requires that at least one phase of the production process should be carried out in the region of Emilia Romagna.
The forests of the average Santerno Valley enclose a delicious fruit, the delicious Brown of Castel del Rio PGI. This fruit is distinguished by the chestnut, not so much for size as for the shape, oblong, and the quality of the fine pulp, sweet and intense.
Natural products of these hills, the browns are very different from the more common chestnuts.
Firstly, the brown is distinguished by the taste more sweet and fragrant, encloses and enhances the aromas and flavors of the forest. In addition, the brown has a much greater size of chestnuts, so much so that a hedgehog contains at most 2 or 3 fruits. Last of its quality, the brown is protected by a peel and brown with a thin peel that can be removed with ease, almost impossible task with chestnuts.
All the goodness of brown is savored fully in the fall, but the wisdom of mountain people has developed a process to preserve all natural until spring delicacy of the fruit.
For about 8 days immerse the chestnuts in water, so as to cause a slight fermentation. The fruits are then allowed to dry in well-ventilated areas and collected in net bags. This simple method makes it possible to appreciate the taste of brown up in the spring and especially respects the naturalness of the product, in the cultivation of brown, in fact, is not given to any chemicals. Plants feed exclusively on what the land offers them spontaneously, without fertilizer or pesticide treatments. This delicacy is a gift all natural sun and the earth, produced with the utmost respect of health and environment.
