The Amarene Brusche Modena become part of the official list of typical Italian products with the certification PGI (protected geographical indication) that was issued on 30 October 2009.
Being a product of PGI certification requires that at least one phase of the production process should be carried out in the region of Emilia Romagna.
The PGI Amarene Brusche of Modena is the jam of the fruits of the plants commonly known as cherry acids. In full respect of the traditional recipe, is produced using only sugar, without adding other ingredients.
Characterized by distinctive sour flavor, which distinguishes it clearly from the other preserves, jam Amarene Brusche Modena PGI is ideal for preparing cakes and tarts made from pastry. It can be enjoyed to the natural, as a dessert after a meal, and it is very appreciated also in conjunction with the ice cream. Typical dessert of Modena tradition is the “tart cherries”, cake with base of pastry and covered with black cherry jam abrupt: the association of taste extremely sweet base with that sour cover gives this cake a unique connotation and unmistakable .
The development of the processing of the cherries is definitely linked to the peculiarities of this fruit. The wide availability of the product in a very small period of time, due to periods of maturation very close between the different varieties, combined with a poor shelf life, makes the cherries unsuitable for marketing for fresh consumption, as happens in the case of sweet cherries, favoring instead the use to prepare syrups, preserves, jams, puddings and cakes.
The Protected Geographical Indication Amarene Brusche Modena is exclusively reserved for the best fruit, which must have some specific characteristics, such as soft texture, reddish brown with dark reflections and a perfect balance of flavor, between the sweet and the sour.
The production area of ​​the jam Amarene Brusche Modena PGI is limited to the province of Modena and some towns in the plains and medium hills of the province of Bologna in Emilia Romagna.
