The extra virgin olive oil Bruzio joined the official list of typical Italian products with the certification PDO (protected designation of origin) that was released June 13, 1997.
Being a product PDO certification requires that the entire production process must be carried out in the region of Calabria.
The PDO Bruzio, must necessarily be accompanied by one of the following geographical indications: “Fascia Prepollinica”, “Valle Crati”, “Colline Joniche Presilane” and “Sibaritide”.
The protected designation of origin accompanied by the geographical Bruzio “Fascia Prepollinica” is reserved for extra virgin olive oil obtained from the following varieties of olive: Tondina in not less than 50%, Carolea in no more than 30%, Coarse Cassano to an extent not exceeding 20%. Other varieties can be up to a maximum of 25%.
The protected designation of origin accompanied by the geographical Bruzio “Valle Crati” is reserved for extra virgin olive oil obtained from the following varieties of olive: Carolea in not less than 50%, Tondina in no more than 30%, or Dolce Rossanese Rossano in no more than 20%. Other varieties can be up to a maximum of 20%.
The protected designation of origin accompanied by the geographical Bruzio “Colline Joniche Presilane” is reserved for extra virgin olive oil obtained from the following varieties of olive: Rossanese or Dolce di Rossano in not less than 70%. Other varieties can be up to a maximum of 30%.
The protected designation of origin accompanied by the geographical Bruzio “Sibaritide” is reserved for extra virgin olive oil obtained from the following varieties of olive: Large Cassano in not less than 70%, Tondina in no more than 30%. Other varieties can be up to a maximum of 30%.
The production area of ​​olives for the production of extra virgin olive oil PDO Bruzio includes, as part of the administrative territory of the Province of Cosenza, territories Olive trees with certain quality characteristics.
When released for consumption the extra virgin olive oil PDO Bruzio accompanied by the geographical “Fascia Prepollinica” must have the following characteristics:
-color: green with yellow;

When released for consumption the extra virgin olive oil PDO Bruzio accompanied by the geographical “Valle Crati” must have the following characteristics:
– Color: from green to yellow;
– Smell: medium fruity;
– Taste: fruity;
– Maximum total acidity of not more than 0.7 grams per 100 grams of oil;
When released for consumption the extra virgin olive oil PDO Bruzio accompanied by the geographical “Colline Joniche Presilane” must have the following characteristics:
– Color: golden yellow with green highlights,
– Aroma: delicate fruity;
– Taste: fruity with sweet almond;
– Maximum total acidity of not more than 0.8 grams per 100 grams of oil;
When released for consumption the extra virgin olive oil PDO Bruzio accompanied by the geographical “Sibaritide” must have the following characteristics:
– Color: yellow with some green reflection;
– Smell: light fruity;
– Flavor: slightly fruity with a slight bitterness;
– Maximum total acidity of not more than 0.7 grams per 100 grams of oil;
The extra virgin olive oil PDO Bruzio can be used mainly to accompany grilled fish or boiled vegetables, as well as traditional dishes from Calabria.
