Cerasuolo d’Abruzzo joined the official list of typical Italian products with the certification DOC (denomination of controlled origin) that was released July 15, 1968.
Being a DOC certification requires that the entire production process must be carried out in the region of Abruzzo.
The DOC Cerasuolo d’Abruzzo is reserved for wines, even in the typology “Superiore”.
The production area of ​​the grapes used in the production of Cerasuolo d’Abruzzo DOC includes several municipalities of the provinces of Chieti, L’Aquila, Pescara and Teramo.
The denomination of origin Cerasuolo d’Abruzzo when released for consumption must have the following characteristics:
– Color: pink cherry, more or less;
– Smell: pleasant, finely winey, fruity, fine and intense;
– Taste: dry, soft, harmonious, delicate almond aftertaste pleasantly;
– Minimum alcohol content: 12,00% vol.
The denomination of origin Cerasuolo d’Abruzzo Superior type when released for consumption must have the following characteristics:
– Color: pink cherry, more or less;
– Smell: pleasant, finely winey, fruity and intense, with hints of spice;
– Taste: dry, soft, harmonious, delicate almond aftertaste pleasantly;
– Minimum alcohol content: 12,50% vol.
Grapes:
– Montepulciano 85%;
– can compete grapes of other non-aromatic red grapes suitable for cultivation in the region Abruzzo, alone or together, up to a maximum of 15%.
Serving temperature: around 18 ° C – 20 ° C.
Serving suggestions: excellent with meats, vegetable soups and fish soups.
