VEGETARIAN HAMBURGER OF SARCONI BEANS PGI WITH TALEGGIO CHEESE PDO

MEETING BETWEEN BASILICATA AND LOMBARDIA TASTES

Today we combine a high-quality product of Southern Italy with a wonderful cheese of Northern Italy.
The bean was brought to Europe from the Americas. It’s a legume rather small and it is offered in the kitchen after being boiled. The beans are sold fresh, dried or precooked.

Preparation time: 10 minutes + 30 resting in a refrigerator
(If dried, take beans for 6 hours in cold water + 2-3 hours of cooking)
Cooking time: 15-20 minutes
Preparation for: 4-6 burgers

Ingredients:
400 gr of Sarconi Beans PGI
1 tablespoon mustard
1 shallot or 1 small onion
1 egg
bread crumbs

Seal hamburger:
Taleggio PDO 100/150 gr
mayonnaise
1 fresh tomato
salad
salt, pepper and extra virgin olive oil

Preparation:
Put the dried beans in cold water for about 6 hours.
Bake in a lot of cold water, once it reaches the boil, reduce heat.
The vegetables are cooked until they are tender, about 2-3 hours.
This procedure can also be done the day before.
Take the Sarconi Beans PGI boiled and put them in a blender.
Chop together the egg, shallot, mustard, one tablespoon of bread crumbs, salt and pepper, until the mixture is creamy but not liquid.
With a mold or with your hands, you get hamburgers.
Cover hamburgers with bread crumbs.
Put in the refrigerator to harden for about 20-30 minutes.
For cooking use a non-stick pan, possibly with a tablespoon of oil.
Bake for about 10 minutes per side.
Towards the end of cooking, add the Taleggio cheese PDO into thin slices and cover the pan with a lid, so as to melt the cheese.
Cut the sesame bread in half, add mayonnaise, salad, slices of fresh tomato, hamburger with cream cheese and close the sandwich.
