Bresaola della Valtellina becomes part of the official list of typical Italian products with the certification PGI (protected geographical indication) that was released on July 2, 1996.
Being a product of PGI certification requires that at least one phase of the production process should be carried out in the region of Lombardy.
The unique climate of Valtellina is the main secret that characterizes the production of Bresaola della Valtellina PGI and makes a typical and inimitable.
The fresh air and dry descending from the heart of the Alps and the particular shape of the Province of Sondrio, create ideal conditions for the gradual maturing of Bresaola della Valtellina PGI.
The charm of this meat, produced with the best cuts of beef thigh, it is implicit in its transformation, since the processing steps must follow precise rules, which tradition has transformed into true rituals, such as the ability in the choice of cuts best of adult cattle, peak hip and topside. Massaging the meat salting, the right changes in temperature and humidity, are still the legacy of a culture inherent in the local tradition.
Every single piece of meat is subjected to careful selection. The specialized operator proceeds to the evaluation of the workpiece and to the eventual trimming, which must be done with precision in order to remove the fat and the external tendinous parts without affecting the pulp.
Salting is carried out dry: the meat that exceeds the compliance check is sprinkled with a moderate amount of sodium chloride and natural flavorings.
The seasoning, including the drying time lasts from 4 to 8 weeks. The aging rooms, as well as those of drying, must be equipped with systems specially air-conditioned able to ensure the optimum air exchange and appropriate conditions of temperature and humidity.
It is a very nutritious sausage, absolutely the most low in fat, high in protein, iron, minerals and vitamins, highly digestible: ideal for those who love the lightness without sacrificing taste.
