The Arctic Trentino joins the official list of typical Italian products with the certification PGI (protected geographical indication) that was released May 24, 2013.
Being a product of PGI certification requires that at least one phase of the production process should be carried out in the regions of Trentino Alto Adige and Lombardy.
The production area of ​​the Arctic Trentino PGI covers the entire territory of the Province of Trento and the municipality of Bagolino in Province of Brescia.
The Arctic Trentino PGI is attributed to salmon fish belonging to the species arctic char. The main features of the Arctic Trentino PGI are the index of fullness much reduced, the fat content and the taste characteristics of the meat, which is firm, tender and dry, with a delicate flavor of fish and mild odor freshwater , devoid of any aftertaste muddy. The main element that determines these qualities is the abundant water that comes from the snowfields and glaciers, with high degree of oxygenation. The culture of the Arctic Trentino PGI is very old and has its roots in a long tradition consolidated since the nineteenth.
When ready for consumption, the char must have the following characteristics: gray-green or brown, with the back and flanks specks sprinkled with whitish, yellow or pink, with no halo; dorsal fin and tail gray, the other orange with white anterior margin. The meat is white or salmon.
Each stage of the production process is monitored, with all inputs and outputs. In this way, and by drawing up lists managed by the inspection body, the breeding tanks, farmers, slaughterers and packagers, and timely notification to the inspection of the quantities produced, ensures the traceability. All persons, natural or legal persons recorded in the registers are subject to checks by the monitoring body, according to the terms of production and the control plan.
The water used in breeding must come from spring water, and / or wells and / or rivers and streams included in the production area.
The feed must be free of GMO and appropriately certified according to local regulations.
