The extra virgin olive oil Monti Iblei joined the official list of typical Italian products with the certification PDO (protected designation of origin), which was released November 25, 1997.
Being a product PDO certification requires that the entire production process must be carried out in the region of Sicily.
The PDO Monti Iblei, must necessarily be accompanied by one of the following geographical indications: “Monte Lauro”, “Val d’Anapo”, “Val Tellaro”, “Frigintini”, “Gulfi”, “Valle dell’Irminio” , “Calatino” and “Trigona-Pancali”.
The PDO Monti Iblei, accompanied by the geographical “Monte Lauro” is reserved for extra virgin olive oil obtained from the olive variety Tonda Iblea present in the olive groves in not less than 90%. Other varieties can be up to the maximum limit of 10%.
The PDO Monti Iblei, accompanied by the geographical “Val d’Anapo” is reserved for extra virgin olive oil made from olives Tonda Iblea, present in the olive groves, in not less than 60%. Could help other varieties up to a maximum of 40%.
The PDO Monti Iblei, accompanied by the geographical “Val Tellaro” is reserved olive oil obtained from olives of the Moorish, present in the olive groves, in not less than 70%. Other varieties can be up to a maximum of 30%.
The PDO Monti Iblei, accompanied by the geographical “Frigintini” is reserved for extra virgin olive oil obtained from olives of the Moorish, present in the olive groves, in not less than 60%. Other varieties can be up to a maximum of 40%.
The PDO Monti Iblei, accompanied by the geographical “Gulfi” is reserved for extra virgin olive oil obtained from the olive variety Tonda Iblea, present in the olive groves in not less than 90%. Other varieties can be up to the maximum limit of 10%.
The PDO Monti Iblei, accompanied by the geographical “Valle dell’lrminio” is reserved for extra virgin olive oil obtained from olives of the Moorish, present in the olive groves, in not less than 60%. Other varieties can be up to a maximum of 40%.
The PDO Monti Iblei, accompanied by the geographical “Calatino”, is reserved for extra virgin olive oil made from olives Tonda Iblea, present in the olive groves, in not less than 60%. Other varieties can be up to a maximum of 40%.
The PDO Monti Iblei, accompanied by the geographical “Trigona-Pancali”, is reserved for extra virgin olive oil obtained from olives of Nocellara Etnea, present in the olive groves, in not less than 60%. Other varieties can be up to a maximum of 40%.
Olives for the production of extra virgin olive oil Monti Iblei PDO, must be produced in the territory of the provinces of Siracusa, Ragusa and Catania.
The time of packaging the extra virgin olive oil with denomination of protected origin Monti Iblei accompanied by the geographical “Monte Lauro”, must have the following characteristics:

– Smell: medium fruity with media sensation of grass;
– Taste: fruity with medium spicy;
– Maximum total acidity of not more than 0.5 grams per 100 grams of oil.
The time of packaging the extra virgin olive oil with denomination of protected origin Monti Iblei, accompanied by the geographical “Val d’Anapo”, must have the following characteristics:
– Color: green;
– Smell: light fruity with media sensation of grass;
– Taste: fruity with a slight spicy;
– Maximum total acidity of not more than 0.5 grams per 100 grams of oil.
The time of packaging the extra virgin olive oil with denomination of protected origin Monti Iblei, accompanied by the geographical “Val Tellaro” must have the following characteristics:
– Color: green;
– Smell: medium fruity with a slight feeling of grass;
– Taste: fruity with medium spicy;
– Maximum total acidity of not more than 0.5 grams per 100 grams of oil.
The time of packaging the extra virgin olive oil with denomination of protected origin Monti Iblei, accompanied by the geographical “Frigintini” must have the following characteristics:
– Color: green;
– Aroma: fruity with medium feeling of grass;
– Taste: fruity with medium spicy;
– Maximum total acidity of not more than 0.5 grams per 100 grams of oil.

– Color: green;
– Aroma: fruity with medium feeling of grass;
– Taste: fruity with medium spicy;
– Maximum total acidity of not more than 0.5 grams per 100 grams of oil.
The time of packaging the extra virgin olive oil with denomination of protected origin Monti Iblei, accompanied by the geographical “Valle dell’Irminio” must have the following characteristics:
– Color: green;
– Smell: light fruity with a slight feeling of grass;
– Taste: fruity with a slight spicy;
– Maximum total acidity of not more than 0.65 grams per 100 grams of oil.
The time of packaging the extra virgin olive oil with denomination of protected origin Monti Iblei, accompanied by the geographical “Calatino” must have the following characteristics:
– Color: green;
– Smell: light fruity with media sensation of grass;
– Taste: fruity with a slight spicy;
– Maximum total acidity of not more than 0.6 grams per 100 grams of oil.
The time of packaging the extra virgin olive oil with denomination of protected origin Monti Iblei, accompanied by the geographical “Trigona-Pancali” must have the following characteristics:
– Color: green;
– Smell: medium fruity with a slight feeling of grass;
– Taste: fruity with a slight spicy;
– Maximum total acidity of not more than 0.5 grams per 100 grams of oil.
The extra virgin olive oil Monti Iblei PDO has a nice green color, is particularly tasty and, according to the subzone of production, may be more or less fruity, herbaceous, fruity flavor with notes and medium-spicy. It has low acidity. It tastes preferably raw of cooked vegetables, salad, garlic bread, roasts, fish dishes and vegetables.
