The extra virgin olive oil Garda becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin), which was released November 25, 1997.
Being a product PDO certification requires that the entire production process must be carried out in the regions of Lombardy, Veneto and Trentino Alto Adige.
The designation of origin Garda, must be accompanied by one of the following additional geographical “Bresciano”, “Orientale” and “Trentino”.
The designation of origin Garda, accompanied by the additional geographical “Bresciano”, is reserved for extra virgin olive oil obtained from the following varieties of olive trees, alone or together in the groves: Casaliva, Frantoio and Leccino for at least 55%. They can also other varieties present in the groves in no more than 45%.
The designation of origin Garda, accompanied by the additional geographical “Eastern” is reserved for extra virgin olive oil obtained from the olive variety Casaliva or Direct her present in the groves for at least 50%. They can also compete the following varieties: Lezzo, Favarol, Rossanel, Race, Fort, Morcai, Trepp, Pendolino, which in the groves, alone or together, in no more than 50%.
The designation of origin Garda, accompanied by the additional geographical “Trentino” is reserved for extra virgin olive oil obtained from the following varieties of olive trees alone or in combination, in the groves: Casaliva, Frantoio, Pendolino and Leccino for at least 80 %. They can also other varieties present in the groves in no more than 20%.
Olives for the production of extra virgin olive oil Garda PDO must be produced in the territories of the provinces of Brescia, Verona, Mantua and Trento.
When released for consumption the extra virgin olive oil with denomination of origin Garda accompanied by the geographical “Bresciano” must have the following characteristics:
– Color: from green to yellow;
– Smell: medium fruity or light;
– Taste: fruity with a slightly bitter and spicy;
– Maximum total acidity of not more than 0.6 grams per 100 grams of oil.
When released for consumption the extra virgin olive oil with denomination of origin Garda accompanied by the geographical “Eastern” must have the following characteristics:
– Color: green marked by intense, with little change in the component of the yellow;
– Smell: slightly fruity;
– Taste: fruity with sweet almond;
– Maximum total acidity of not more than 0.6 grams per 100 grams of oil.
When released for consumption the extra virgin olive oil with denomination of origin Garda accompanied by the geographical “Trentino” must have the following characteristics:
– Color: green with golden reflections;
– Smell: light fruity with herbaceous feeling;
– Flavor: fruity, delicately fruity;
– Maximum total acidity of not more than 0.5 grams per 100 grams of oil.
The extra virgin olive oil Garda PDO can be used for many preparations in the kitchen, both raw and for cooking and, thanks to its delicate flavor, goes well with many dishes. It is crucial to its use for dishes based on fish from the lake, dips, meat, soft cheese, low-fat cheese, salted meat, raw meat and fish, cooked or raw vegetables, sauces, bruschetta, to prepare cakes, sorbets, ice cream and lots other things.
