Rice Baraggia Biella and Vercelli becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released August 22, 2007.
Being a product PDO certification requires that the entire production process must be carried out in the Piedmont region.
The area bounded by the protected designation of origin Rice Baraggia Biella and Vercelli in several communes in the provinces of Biella and Vercelli.
The varieties permitted to PDO Rice Baraggia Biella and Vercelli are; Arborio, Baldo, Balilla, Carnaroli, S. Andrea, Loto and Gladio.
Peculiar characteristics of the product are held at the firing, the higher consistency and a lower stickiness of the grain compared to the same varieties produced in other areas.
