Recioto di Soave joined the official list of typical Italian products with the certification DOCG (denomination of controlled and guaranteed origin) that was released May 7, 1998.
Being a product DOCG certification requires that the entire production process must be carried out in the region of Veneto.
The denomination of controlled and guaranteed origin Recioto di Soave is reserved for wines Recioto di Soave, Recioto di Soave Classico and Recioto di Soave Spumante.
The production area of ​​the grapes used to produce wine Recioto di Soave DOCG includes some municipalities in the Province of Verona.
The types allowed are:
Recioto di Soave and Recioto di Soave Classico
– Color: golden yellow;
– Smell: intense and fruity with hints of vanilla;
– Taste: sweet, smooth round, possibly with a hint of vanilla, also lively as usual;
– Minimum alcohol content 12%.
Recioto di Soave Spumante
– Foam: fine and persistent;
– Yellow: golden, more or less intense;
– Smell: pleasant, intense and fruity;
– Flavor: sweet and sweet, velvety, full-bodied;
– Minimum alcohol 11.50%.
– Garganega for at least 70% and the remaining from the grapes of Trebbiano di Soave (ours);
– In this area by 30% and up to a maximum of 5% may also contribute grapes from white grape varieties allowed for cultivation in the Province of Verona.
Serving temperature: around 10 ° C – 12 ° C.
Serving suggestions: ideal with desserts typical of the Province of Verona, as the “fugassa” (flat bread), cakes with jam, pastry and classic Pandoro di Verona. Very pleasant even with blue cheeses.
