The sweet wine with denomination of origin Vin Santo del Chianti, when released for consumption must have the following characteristics:
– Color: from straw yellow to golden to amber;
– Scent: ethereal, intense, characteristic;

– Minimum alcoholic strength: 15.5% vol.
The sweet wine with denomination of origin Vin Santo del Chianti Occhio di Pernice, when released for consumption must have the following characteristics:

– Minimum alcoholic strength: 16.5% vol.
Grapes for the Vin Santo del Chianti:

Grapes for the Vin Santo del Chianti Occhio di Pernice:
– Sangiovese, minimum 50%;

Drying the grapes:
Grapes after undergoing a careful selection must be naturally dried to not before 1 December of the year of harvest and no later than March 31 of the following year.
