The Chianti Classico joined the official list of typical Italian products with the certification DOCG (denomination of controlled and guaranteed origin) that was released on 30 September 2011.
Being a product DOCG certification requires that the entire production process should be made in the Tuscany region.
The production area of ​​the grapes used in the production of Chianti Classico DOCG includes the provinces of Florence and Siena.
The designation of origin and guaranteed Chianti Classico, can be accompanied by the following wording: Great Selection and Reserve.
Chianti Classico Great Selection
– The wines are entirely produced on the farm;
– Aging at least 30 months of which at least 3 in bottle.
Chianti Classico Riserva
– Aging at least 24 months, of which at least 3 in bottle.
The denomination of controlled and guaranteed origin Chianti Classico, when released for consumption must have the following characteristics:
– Color: ruby ​​red of varying intensity;
– Smell: intense, floral, characteristic;
– Taste: dry, fresh, fruity, slightly tannic, which is refined over time;
– Minimum alcohol content: 12%.
The denomination of controlled and guaranteed origin Chianti Classico Reserve, when released for consumption must have the following characteristics;
– Color: intense ruby ​​red, tending to garnet with aging;
– Smell: intense fruity and persistent;
– Taste: dry, balanced by good tannins;
– Minimum alcohol content: 12,50% vol.
The denomination of controlled and guaranteed origin Chianti Classico Great Selection, when released for consumption must have the following characteristics:
– Color: ruby ​​red tending to garnet with aging;
– Smell: spicy and persistent;
– Taste: dry, persistent, balanced;
– Minimum alcohol content: 13% vol.
Wines with designation of origin and guaranteed Chianti Classico DOCG can sometimes be slight hint of wood.
Grapes:
– Sangiovese from 80% up to 100%;
– They can also be used to produce the red grapes from vines suitable for cultivation in the Region of Tuscany to a maximum of 20%.
Serving temperature: around 18 ° C – 20 ° C.
Serving suggestions: Tuscany dishes of meat, roasts, game and mature cheeses.
