The Vino Nobile di Montepulciano becomes part of the official list of typical Italian products with the certification DOCG (denomination of controlled and guaranteed origin) that was issued on 4 November 1989.
Being a product DOCG certification requires that the entire production process should be made in the Tuscany region.
The designation of origin and guaranteed Vino Nobile di Montepulciano is reserved for wines red and red Reserve.
The production area of ​​the grapes used in the production of Vino Nobile di Montepulciano DOCG includes the town of Montepulciano in the Province of Siena.
The denomination of origin and guaranteed Vino Nobile di Montepulciano when released for consumption must have the following characteristics:
– Color: ruby ​​red tending to garnet with aging;
– Smell: intense, ethereal, characteristic;
– Taste: dry, balanced and persistent, with a possible hint of wood;
– Minimum alcohol content: 12,50%, for the type with the words “reserve” 13% vol.
The Vino Nobile di Montepulciano has to undergo a maturation period of at least two years, starting on 1 January following the harvest. This maturation can take place, according to the manufacturer:
– for 24 months in wood;
– for 18 months minimum in wood most the remaining months in another container;
– for 12 months minimum in wood plus 6 months minimum in bottle over the remaining months in another container.
– Sangiovese (called Montepulciano blackthorn) minimum 70%;
– May also contribute up to a maximum of 30%, the complementary grapes suitable for growing in Tuscany, provided that the percentage of white grapes does not exceed 5%.
Serving temperature: around 18 ° C – 20 ° C.
Serving suggestions: excellent with typical Tuscany pasta with meat sauce and the Florentine steak. Also suitable with mature cheese.
