The Oliva Ascolana of Piceno becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released on 15 November 2005.
Being a product PDO certification requires that the entire production process must be carried out in the region of Marche and Abruzzo.
The Oliva Ascolana of Piceno PDO is, the oil in brine or stuffed, obtained from the olive varieties “Ascolana tender”. The olives in brine has a uniform color from green to yellow color, the taste is slightly acidic with a slightly bitter aftertaste. The oil filled has slightly elongated shape (elliptical) with the presence of irregular patches of green; is characterized by olfactory medium intensity with notes of green olive and spices. Its cultivation area includes several municipalities of the Province of Ascoli Piceno and Teramo.
Commercially available in the form of pickled olives and, in fact, filled ready to fry.
Medium size, tender, sweet and full of pulp, quest’oliva, is preserved in brine after a short phase of fermentation of a little more than a week, the olives are placed in containers with salt water and flavored with fennel.
