Cappellaci di Zucca Ferraresi joined the official list of typical italian products with the certification PGI (protected geographical indication) that was issued on 09 february 2016.
Being a product of PGI certification requires that at least one phase of the production process should be carried out in the region of Emilia Romagna.
Cappellaci di Zucca Ferraresi PGI are a fresh filled pasta, whose pastry is obtained by processing a mixture of soft and hard wheat flour and eggs, and whose filling is obtained by processing and cooking of pumpkin pulp varieties “violina”, grated cheese and nutmeg.
At the time of the consumption, Cappellaci di Zucca Ferraresi PGI must have the following characteristics:
Physical characteristics:
– Shape: rounded and folded, in imitation of the typical straw hat of the peasants
– Dimensions: diameter from 4 to 7 cm
– Weight: 10 to 28 gr
Organoleptic characteristics:
– External appearance: typical color of yellow egg noodles with more intense shades at the filling for the presence of the yellow flesh of the pumpkin
– Internal appearance: yellow color of ripe pumpkin
– Consistency: medium tending to soft
– Palate: puff pastry with contrast perception of sweet pumpkin and the salty cheese and a hint of nutmeg.
