The Pampapato Ferrara or Pampepato Ferrara joined the official list of the typical Italian products thanks to PGI (protected geographical indication) that was released on 8 December 2015.
Being a PGI certification requires that at least one phase of the production process must be carried out in the region of Emilia Romagna.
The production area of Pampapato Ferrara or Pampepato Ferrara PGI is composed of the entire territory of the Province of Ferrara.
The traditional recipe of Pampapato Ferrara or Pampepato Ferrara PGI includes the use of the following ingredients:
– White flour type “0”
– Candied fruit: candied peel of orange, lemon and citron
– Dried fruits: sweet roasted almonds with peel
– Granulated Sugar
– Unsweetened cocoa powder
– Spices, including mandatory nutmeg and cinnamon
– Raising agent
– Water
– Wildflower honey (optional and as a partial replacement for sugar)
– Roasted hazelnuts (optional and in addition to sweet almond)
– Extra dark chocolate (cocoa minimum 54%) to cover
When released for consumption, Pampapato Ferrara or Pampepato Ferrara PGI is circular, so-called “shell”, with a flat base and a convex surface. The size of the diameter are between 3 and 35 cm, the height is between 1.5 and 8 cm, and the weight is between 10 gr and 3 kg.
The external appearance is dark brown, shiny, for the dark chocolate coating; the internal aspect is brown, with the widespread presence of dried fruit and candied well distributed.
The perfume is first of chocolate, then gradually of spices, especially nutmeg and cinnamon, candied fruit and toasted almonds.
The initial taste is of dark chocolate with hints of spices, which leaves space as the candied fruit and toasted almonds.
