The Green Asparagus of Altedo becomes part of the official list of typical Italian products with the certification PGI (protected geographical indication) that was released on 19 March 2003.
Being a product of PGI certification requires that at least one phase of the production process should be carried out in the region of Emilia Romagna.
The Green Asparagus of Altedo PGI is produced exclusively in the provinces of Bologna and Ferrara.
After harvesting asparagus must be started at the processing, delivered in bundles or in bulk. For their conservation is essential to slow down the metabolism of the product by a rapid cooling of the shoot through partial immersion in water or other cooling system suitable.
The product is then packaged in bundles, from a minimum of 250 grams to a maximum of 3 kg, suitably connected, and matched to the base using a trimming operation of mechanical or manual. Can be wrapped, at the base, with patches of material suitable for packaging of food products; alternatively the handkerchief bouquets can be adorned with the band, of suitable material, horizontal or vertical.
The Green Asparagus of Altedo PGI is richer in fiber than other vegetables and provides limited amounts of fats, proteins and sugars, and is rich in mineral elements essential for humans, especially calcium, phosphorus, magnesium and potassium. This vegetable also has a high content of antioxidants, and vitamin A, B6 and C and is an excellent source of folic acid.
