Parma Ham joined the official list of typical Italian products with the certification PDO (protected designation of origin) which was issued on 21 June 1996.
Being a product PDO certification requires that the entire production process must be carried out in the region of Emilia Romagna.
Prosciutto di Parma PDO is the story of a territory, its traditions and its people, who over the centuries have created and worked with passion a genuine and natural, refined taste and elegant.
To protect the quality of the product was established in 1963 the Consorzio del Prosciutto di Parma, organization of producers – then 23, now over 170 – that use and safeguard the ancient method of processing.
The most famous ham in the world can only be produced here, on the scented hills of Parma: the particular climatic conditions make this area an ideal environment for the long curing hams, which give taste and delicacy. What is selected for the PDO Prosciutto di Parma is a very special pig. Born and bred in 11 regions of central and northern Italy, exclusively from selected breeds, fed with quality foods: grains and whey derived from the production of Parmigiano Reggiano PDO.
It takes only four ingredients: the rear leg of pigs born and raised in Italy, sea salt, air and time. It is a 100% natural product: it contains no chemical additives or preservatives, is aged for a minimum of 12 months to well over 30 months.
Prosciutto di Parma PDO is aged on the bone, and can then be boned and vacuum packed before distribution. In vacuum packaging, the ham can be stored up to 6 months, cooled to a temperature of about 8 °. The attention to detail and in the early stages of maturation; the passion for work done by ancient traditions and handed down from generation to generation; the balance of aromas and flavors of a rich and generous land; and the quality and attention to the choice of raw material used. These are the elements that make Parma Ham PDO one of the most representative products of Made in Italy and more appreciated and known to the world.
