The Couple Ferrarese joined the official list of typical Italian products thanks to the PGI (protected geographical indication) that was released on 18 October 2001.
Being a product PGI certification requires that at least one phase of the production process should be carried out in the region of Emilia Romagna.
The story goes that in 1536, during an important dinner offered by Messer Giglio to the Duke of Ferrara you start talking about a bread intorto and twisted.
Couple born as a symbol of an entire culture, in a time when humanism allowed to exceed the rules of pure survival to indulge in aesthetics. A central body and two rolled crusts which end pointed, light, fragrant: a true work of art of the table that boasts countless imitations. Unsuccessful attempts, because they lack the keys of his secret: the wisdom of centuries of tradition, quality of ingredients and water, the environment of rising, its moisture and ideal temperatures of ovens and finally the hands of master bakers Ferrara, skilled and capable of giving life to flour and water. Unlikely to walk early in the morning on the streets of Ferrara without being hit by a pleasant scent, impossible to resist the temptation to enter into an oven and enjoy the fragrance of Couple Ferrarese PGI.
