Mortadella Bologna joined the official list of typical Italian products with the certification PGI (protected geographical indication) that was released on 17 July 1998.
Being a product of PGI certification requires that at least one phase of the production process should be carried out in the regions: Emilia Romagna, Lombardy, Piedmont, Veneto, Marche, Lazio, Trentino Alto Adige and Tuscany.
Mortadella Bologna PGI is a meat product made with pure pork meat, finely chopped, mixed with lard, lightly flavored with spices. Is stuffed and baked, has a cylindrical or oval, pink and intense aroma, slightly spicy.
For its preparation are used only fine cuts (meat and lard high quality), shredded appropriately in order to obtain a fine paste. The flavor is full and well balanced. Once cut, the surface is smooth and uniform bright pink color. Mortadella Bologna PGI gives off a particular scent and aroma and taste is typical and delicate. Appetizing and tasty, has a long history and, not surprisingly, is the most famous sausage Bolognese culinary tradition.
Qualified operators of professionalism transmitted from generation to generation, the recipe and passion toward this meat became established over the centuries. For this, Mortadella Bologna PGI may be produced only in the areas of northern Italy where the famous sausage has spread over the centuries to the present day.
