The extra virgin olive oil Lametia becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released October 5, 1999.
Being a product PDO certification requires that the entire production process must be carried out in the region of Calabria.
The extra virgin olive oil Lametia PDO must be obtained from olive varieties Carolea present in the olive groves in not less than 90%. Other varieties can be in no more than 10%.
Olives for the production of extra virgin olive oil Lametia PDO, must be produced in the territory of the Province of Catanzaro.
The extra virgin olive oil Lametia PDO when released for consumption must have the following characteristics:
– Color: from green to straw yellow;
– Odor: fruity;
– Flavor: delicate fruity;
– Maximum total acidity not exceeding 0.5 grams per 100 grams of oil.
The extra virgin olive oil Lametia PDO is used for cooking, salad dressings, seasoning dishes from Calabria, store vegetables in jars. Its high smoke point, also makes it very suitable for frying.
