The nougat of Bagnara joined the official list of typical Italian products with the certification PGI (protected geographical indication) that was released August 14, 2014.
Being a product of PGI certification requires that at least one phase of the production process should be carried out in the region of Calabria.
The PGI Nougat Bagnara must be produced exclusively within the administrative boundaries of the town of Bagnara, in the Province of Reggio Calabria.
The nougat of Bagnara PGI is obtained by cooking and processing of sugar and toasted almonds, with the addition of honey, egg whites, cocoa powder, essential oils and spices powder, depending on the specific variants, the “Martiniana or Roasted frosted “.
The processing of the product requires a fair amount of dexterity and expertise, particularly in the dosage of the ingredients, in the control of the cooking process to direct fire and modeling operations.
The basic ingredients of the nougat of Bagnara PGI must be mixed in precise doses, and with particular methods of cooking, processing and packaging that characterize the mark to protection of the product. Today the nougat is among the sweets of the Christmas holidays, but as time goes on, more and more, its use has spread to other months of the year.
