Today we prepare a first course by the colors and flavor that take you right to the summer. Rich of taste and flavor, even tastier when eaten cold. Typical dish of Lazio and Italian cuisine.
Today we use two excellences of Lazio, the Extra virgin olive oil of Sabina PDO and Potatoes of High Viterbese PGI.

12 tomatoes
13 tablespoons of Carnaroli rice
200 gr of tuna in brine
1 clove of garlic (optional)
3-4 tablespoons of tomato sauce
5 basil leaves
Extra virgin olive oil of Sabina PDO
Salt and Pepper
10 Potatoes of High Viterbese PGI

Wash the tomatoes under cold water, dry them and deprive them of the cap, with a sharp box cutter, remove the pulp inside them, taking care not to break them and place in a bowl.
Place drained tomatoes on a baking tray lined with lightly salted and oiled baking paper. Cut the pulp into small pieces with the help of a knife, or if you prefer to pass it to the mill, add the rice, shredded basil leaves, the tuna private of its water, the tomato sauce, salt, pepper and extra virgin olive oil. Stir to combine ingredients and let stand for 15 minutes.
Meanwhile peel the potatoes, cut into wedges and put them to soak in cold water.
Now salt inside the tomatoes and sprinkle each with a little drop of Extra virgin olive oil of Sabina PDO, then fill them with the mixture up to the edge and close them.
Drain the potatoes, dry them with a cloth and place them inside the bowl where you have left a bit seasoned rice, season with salt, pepper and rosemary, stir and add a clove of garlic and drizzle everything with extra virgin olive oil .
Now bake the pan at 200 degrees for about 1 hour, before turning out sample if the potatoes are cooked. Before turning off the oven, operate the grill to brown slightly.
