Today we prepare a simple but fragrant sauce to taste during our summer vacation. We will use a wonderful product, the San Marzano Tomato of Agro Sarnese-Nocerino PDO. This sauce is ideal used cold after cooked and drained pasta in a bowl.

Preparation for: 4 people
800 g San Marzano Tomatoes of Agro Sarnese-Nocerino PDO
10 basil leaves
extra virgin olive oil
2 cloves of garlic
To peel the tomatoes in a sauce-pan, bring water to a boil. Remove the stalk and carve with a cross-cut tomatoes in the lower part. Dip them in boiling water for 1 minute, drain, soak them in a bowl full of cold water and, soon after, peel them.
Now open the tomatoes and remove seeds. Subsequently cut into small pieces so as to form the cubes of 1 cm per side.
Chop the basil and 2 cloves of garlic.
Put in jars the pieces of tomato, then salt, basil, garlic and, if desired, a bit of black pepper.
Continue in this manner until the end of the jar, then add the extra virgin olive oil to cover well.
To mix well the flavours turn the jar, after closing it, in a circular motion some time so as to permeate the oil well in tomato.
Then cover the sauce with extra virgin olive oil and refrigerate.
You can keep this fresh and fragrant sauce in the refrigerated for about 3-4 days.
