EGGPLANT GRATIN COOKED IN ELENA’S STYLE WITH CACIOCAVALLO SILANO PDO

Tasty appetizer with eggplant and Caciocavallo PDO. Today we combine this versatile vegetable to an aromatic and sweet Caciocavallo Silano cheese PDO.

Preparation for: 4 people (about 16 slices of eggplant)

Ingredients:
2 medium eggplants
some cherry tomatoes (about 20 cherry tomatoes)
200 g of Caciocavallo Silano cheese PDO
breadcrumbs
Extra virgin olive oil
salt
oregano

Preparation:
Peel a large eggplant, then cut into slices with thickness of 1-2 cm.
Cut the cherry tomatoes into slices and flavour with extra virgin olive oil and salt.
Slice the Caciocavallo Silano cheese PDO.
Season the breadcrumbs with oregano.
Pre-heat oven to 180 degrees.
Arrange eggplant slices on a baking tray covered with oven-paper.
Bake the eggplant slices for about 10 minutes, then pull them out of the oven.
Cover each slice of eggplant with Caciocavallo Silano cheese PDO, then lay over cherry tomatoes seasoned and then add the breadcrumbs flavored.
Bake again for 10 minutes to the gratin.
Remove from oven and let cool before serving.
