The codfish pancakes with Tomatoes of Pachino PGI are a delicious “finger food”. The codfish is replacing the baby sardines or whitebait (in dialect “nunnata” or “sarduzza”). This type of fish is caught only in the first months of the year and is, therefore, difficult to find. Today we combine the fish with the tasty Tomato of Pachino PGI.

Preparation for: about 20 pancakes

Ingredients:
400 g of fresh codfish
4 eggs
10 Tomatoes of Pachino PGI
½ onion
1 tablespoon extra virgin olive oil
Salt
Vegetable oil for frying

Preparation:
Chop half an onion finely.
Empty seeds from the Tomatoes Pachino IGP and chop finely.
Cook the onion and the tomatoes over low heat in a pan with a tablespoon of extra virgin olive oil  for 10 minutes.
Make them subsequently cool to room temperature.
Cut the codfish into small pieces.
In a large bowl, combine 4 beaten eggs, codfish, onion, Tomatoes of Pachino PGI and a pinch of salt.
Mix everything well.
Add the vegetable oil in the pan already used previously.
Pour a spoonful of the mixture in hot oil and cook the pancakes 1 minute per side.
Arrange the pancakes on paper towels and salt to taste.
Serve the pancakes hot yet.
