This is the aperitif of Treviso for excellence. The Sandwiches with asparagus and eggs is the perfect match to best enjoy a glass of Prosecco or Spritz, an alcoholic aperitif Italian, popular in the Triveneto, made of white wine or Prosecco, soda / seltzer and bitter.

Preparation for: 12 sandwiches

12 square slices of white bread for sandwiches
6 Asparagus Badoere PGI
2 boiled eggs
salt, pepper and extra virgin olive oil

Cook for 5-7 minutes 2 eggs in water.
To preserve the heritage of vitamins and the texture of Asparagus Badoere PGI it’s better to boil the asparagus in a little water, or steam cook for about 10-20 minutes depending on size.
Spread 6 slices of bread with mayonnaise.
Put on 6 slices spread with mayonnaise the slices of eggs, leaving a centimeter edge all around.
Flavour the asparagus in a bowl, cut into 4 pieces lengthwise, with salt, pepper and extra virgin olive oil.
Lay the asparagus on the eggs.
Lay a teaspoon of mayonnaise in the center of the remaining 6 slices.
Cut them like a triangle
This will give you 12 great triangular sandwiches.
