The white truffle of Alba has a globular often flattened and uneven, with pale yellow or ocher peridot. The Glebe, crossed by many white veins, highly branched, ranging from milk-white to deep pink to brown.
The dimensions are variable. It is harvested from late summer throughout the autumn until early winter.
It is an absolutely spontaneous mushroom: to date there are no farming techniques.
The white truffle of Alba can be stored in the refrigerator wrapped in paper towels and in a closed glass container. A fresh truffles can keep for about a week, but should still be consumed as soon as possible.
The truffle must be cleaned with a brush under cold water to remove any lump of earth. So it is thoroughly dried and consumed after about ten minutes.
