Mortadella di Prato joins the official list of the typical Italian products with the certification PGI (protected geographical indication) that was released on January 28, 2016.
Being a PGI certification requires that at least one phase of the production process must be carried out in the region of Tuscany.
The production and packaging area of the Mortadella di Prato PGI comprises the whole of the city of Prato and the municipalities of Agliana, Montale and Quarrata in the province of Pistoia.
The Mortadella di Prato PGI is a product made from a mixture of pork, sea salt, garlic, spices and alchermes or alkermes (in amounts between 0.3 and 0.6%), bagged and subjected to heat treatment.
The product shall apply to the market for consumption; a weight of between 0.5 and 10 kg, a cylindrical shape or roughly elliptical shape, a length of between 8 and 70 cm.
The external appearance is smooth or wrinkled depending on the casing used; the consistency of the dough is firm and compact, soft on the palate for fine grinding; the exterior color is pink and tending to opaque; the internal color is pink, thanks to the alchermes color, with white spots due to the cubes of fat; the scent is penetrating and spicy with alchermes known at first sight; the flavor is typical of the product for the contrast between the warm note and pungent spices, garlic and sea salt and the sweet and delicate of alchermes.
