Soppressata Calabria joined the official list of typical Italian products with the certification PDO (protected designation of origin) which was issued on 21 January 1998.
Being a product PDO certification requires that the entire production process must be carried out in the region of Calabria.
Soppressata Calabria PDO is the most prized Calabrian sausage at the rate of a mixture of meat produced by ham and tenderloin or shoulder and the addition of fat, well chosen from lard front of the loin.
The meat and lard, selected and chopped medium cutting and appropriately flavored with black pepper or red pepper spicy or sweet, are stuffed into natural pig guts.
Drilled and tied by hand with natural twine and the characteristic shape slightly flattened are left to mature for a minimum period of 45 days.
