Salame Brianza joined the official list of typical Italian products with the certification PDO (protected designation of origin) which was issued on 21 June 1996.
Being a product PDO certification requires that the entire production process must be carried out in the region of Lombardy.
Salame Brianza PDO is produced with pork from farms in Lombardy, Emilia-Romagna and Piedmont.
The recipe, unique and inimitable, strictly regulates the ingredients and their quantities. And ‘produced fine-grained and coarse-grained. The drying and curing are conducted according to rules well established in the time and manner, depending on the diameter of the sausage.
Salame Brianza PDO is produced in a variety of formats and sizes: from tidbit to the large format, products pre-sliced and pre-packaged with salami entire packaged in a protective atmosphere.
