Prosciutto di Sauris joined the official list of typical Italian products with the certification PGI (protected geographical indication) that was released on April 20, 2010.
Being a product of PGI certification requires that at least one phase of the production process should be carried out in the region of Friuli Venezia Giulia.
Famous for light smoking, his goodness and aroma particular data on what kind of air and climate of the place where it is produced, namely Sauris, a country in the Friuli Venezia Giulia which enjoys an air dry and crisp. Sauris is a country located at about 1200 meters high in the Upper Valley Lumiei, in Friuli Venezia Giulia, is the ideal place for the production of a variety of exquisite ham, slightly savory, but soft, unique for its sweetness and for its light and tasty smoke, which makes it particularly refined.
The system of smoke is almost exclusively and has always been used to compensate for the excessive moisture in the air which did not allow satisfactory spontaneous drying for hams. Prosciutto di Sauris PGI is derived from pigs of local breed lean, is washed with wine and vinegar, dry flavored with salt, pepper, garlic, spices and herbs, and this operation is repeated several times in a month.
It is a salty ham, smoked and aged for at least ten months. When seasoning the ham is presented whole bone without a hand. The rind has uniform color walnut-golden with orange accents, while the lean visible dark red. The texture is firm and elastic; fat is pure white or pink. Prosciutto di Sauris PGI is recognizable thanks to its special delicate fragrance and taste sweet with a gentle hint of smokiness.
