The Asparagus of Cantello joined the official list of typical Italian products with the certification PGI (protected geographical indication) that was released on January 19, 2016.
Being a PGI certification requires that at least one phase of the production process should be made in Lombardia region.
The production area of Asparagus of Cantello PGI must be carried out exclusively in the municipality of Cantello, in the province of Varese.
The cultivars used for the production of Asparagus of Cantello PGI are the “Early Argenteuil” and hybrids thereof.
Shoots of Asparagus of Cantello PGI must be entirely white, or with the tips slightly pink. Shoots also must be of whole fresh look.
The Asparagus of Cantello PGI, which must not exceed a height of 22 cm, must be classified according to the diameter of the shoot (central area) in two quality classes:
– Extra: diameter of the shoot 21 to 25 mm
– First: diameter of the shoot from 13 to 20 mm
The organoleptic analysis has defined the following characters:
– Smell: intense yet delicate overall, without anomalous notes
– Taste: intense sweet, slightly bitter aftertaste
