The Pepper Senise joined the official list of typical Italian products with the certification PGI (protected geographical indication) that was released on July 2, 1996.
Being a product of PGI certification requires that at least one phase of the production process should be carried out in the region of Basilicata.
The Pepper Senise PGI has a sweet taste with intense fragrance, has a deep red color when ripe, pulp very thin, a length from 9 to 17 cm and a stalk with strong resilience to the berry.
Are marketed both fresh and dried in necklaces and powder. The subtlety of the pulp and the low water content ensure fast drying, a high concentration of flavor and a long and natural conservation.
The Pepper Senise PGI is always called in the local dialect “Zafaran ‘”.
These peppers, fresh, dried and powdered, are used in cooking in many traditional recipes. When the peppers are cool you use them grilled or barbecued, when dry, are fried, the “Zafaran ‘Crusk”, can be served as an appetizer, side dish or appetizer.
