The Brown Mugello joined the official list of typical Italian products with the certification PGI (protected geographical indication) that was released July 2, 1996.
Being a product of PGI certification requires that at least one phase of the production process should be made in the Tuscany region.
The geographical indication allows to protect and enhance the quality of physical-chemical, organoleptic and nutritional characteristics of agricultural and food products related to a specific geographical origin. PGI certification guarantees consumers the origin, product quality and compliance with the parameters set by the product specification.
The Brown Mugello PGI must have a particle size of not more than 80 fruits per kilo, ie can not be too small or uneven, must not have any type of anomaly in plant health, or physical-mechanical alterations.
From the chestnut to the product packaged and ready for sale, the whole chain must meet specific requirements. Under the control of the chamber of Commerce of Florence, the PGI certification also includes the product dry and flour, the derivatives of the product that can be enjoyed throughout the year.
