The Trout Trentino joins the official list of typical Italian products with the certification PGI (protected geographical indication) that was released September 24, 2013.
Being a product of PGI certification requires that at least one phase of the production process should be carried out in the regions of Trentino Alto Adige and Lombardy.
The Trout Trentino PGI is the salmonid fish belonging to the species rainbow trout, reared in the entire territory of the Autonomous Province of Trento and in the municipality of Bagolino in Province of Brescia. In this area, the practice of farming in tanks of trout is very old and dates back to the nineteenth century.
When ready for consumption, the trout must have a greenish back with a pink band on both sides; belly whitish; dark specks scattered on the body and on the dorsal fin and the tail. The Trout Trentino PGI is distinguished by products of the same category for the index of the body and very low in fat.
The meat of the trout of Trentino PGI is firm, tender, lean fish with a delicate flavor and a mild odor and fragrant fresh water, without any aftertaste of mud.
The water used in breeding must come from spring water, and / or wells and / or rivers and streams included in the production area.
The feed must be free of GMO and appropriately certified according to local regulations.
