The New Potato of Galatina joined the official list of typical Italian products with the certification PDO (protected designation of origin) that was released September 23, 2015.
Being a product PDO certification requires that the entire production process must be carried out in the region of Puglia.
The production area of the Protected Designation of Origin, New Potato of Galatina consists of the administrative areas of the municipalities in the Province of Lecce.
Product characteristics when released for consumption are as follows:
– Skin (bark or peel), bright yellow, bright; also for the presence of earth residues from cultivation in red earth, it takes on a rust color “chocolate”;
– Shaped long – oval, of medium size;
– Rind not completely separate, easy to flaking, no cracks;
– Whole tubers, do not germinate, regularly shaped and free of defects, from flavors and off-flavors;
– Tubers dry, devoid of “greening”, cracks, dents, rosure, stains and pathological changes.
