The extra virgin olive oil Vulture becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released January 13, 2012.
Being a product PDO certification requires that the entire production process must be carried out in the region of Basilicata.
The extra virgin olive Vulture oil PDO must be obtained at least 70%, by the variety of olive cultivar “Ogliarola Vulture”; may also contribute the following varieties: “Coratina”, “Cima di Melfi”, “Palmarola”, “Provencal”, “Leccino”, “Frantoio”, “Cannellino”, and “Rotondella”, which in the groves no more than 30%, alone or in combination.
Olives for the production of extra virgin olive oil PDO Vulture, must be produced in the Province of Potenza.
The extra virgin olive oil Vulture PDO when released for consumption must have the following characteristics:
– Color: amber yellow with green reflections;
– Odor: fruity olive moderate intensity / strong hint of tomato, cut grass and light note of bitter and spicy;
– Taste: fruity olive oil from mature sweet almond, slightly bitter with a slight hint of spicy;
– Maximum total acidity not exceeding 0.5 grams per 100 grams of oil.
The extra virgin olive oil PDO Vulture is great with all the typical dishes of the Lucania as cavatelli, cod, soup beans and chicory and lamb.
