The extra virgin olive oil Valle del Belice joined the official list of typical Italian products with the certification PDO (protected designation of origin) that was released August 21, 2004.
Being a product PDO certification requires that the entire production process must be carried out in the region of Sicily.
The extra virgin olive oil Valle del Belice PDO must be obtained mainly from olive varieties Nocellara Belice, at least 70%. The other cultivars used are grown in the production area and in particular: the Giarraffa, Biancolilla, Cerasuola, Buscionetto, the Santagatese, Ogliarola Messina and other minor cultivars. Individually or collectively they may not exceed 30%.
Olives for the production of extra virgin olive oil Valle del Belice PDO, must be produced in the Province of Trapani.
The extra virgin olive oil Valle del Belice PDO when released for consumption must have the following characteristics:
– Color: from green to yellow with green reflections;
– Odor: fruity olive oil from unripe to ripe;
– Taste: fairly intense, with hints of bitter and spicy;
– Maximum total acidity not exceeding 0.5 grams per 100 grams of oil.
The extra virgin olive oil Valle del Belice PDO goes perfectly with all the typical dishes of Sicilian cuisine, excellent with fish, grilled vegetables, salads and dips.
