The extra virgin olive oil Terra di Bari joined the official list of typical Italian products with the certification PDO (protected designation of origin), which was released November 25, 1997.
Being a product PDO certification requires that the entire production process must be carried out in the region of Puglia.
The designation of origin Terra di Bari, must be accompanied by one of the following additional geographical “Castel del Monte”, “Bitonto” and “Murgia of Trulli and Caves”.
The designation of origin Terra di Bari, accompanied by the additional geographical “Castel del Monte”, is reserved to the extra virgin olive oil obtained from the olive variety Coratina present in the olive groves in measuring not less than 80%. They can also other varieties present, alone or in combination in the olive groves, in no more than 20%.
The designation of origin Terra di Bari, accompanied by the additional geographical “Bitonto”, is reserved for extra virgin olive oil obtained from the following varieties of olive trees, alone or together, in the groves; Cima di Bitonto or Ogliarola Coratina Bari and at least 80%. They can also other varieties present in the olive groves, alone or together, in no more than 20%.
The designation of origin “Terra di Bari, accompanied by the additional geographical” Murgia of Trulli and Caves “, is reserved to the extra virgin olive obtained from the olive variety Cima di Mola present in the groves for at least 50%. They can also other varieties present in the groves, alone or together, in no more than 50%.
Olives for the production of extra virgin olive oil Terre di Bari PDO, must be produced in the Province of Bari.
When released for consumption the extra virgin olive oil with denomination of origin Terra di Bari accompanied by the geographical “Castel del Monte”, must have the following characteristics:
– Color: green with yellow;
– Aroma: fruity;
– Taste: fruity with medium bitter and spicy;
– Maximum total acidity of not more than 0.5 grams per 100 grams of oil.
When released for consumption the extra virgin olive oil with denomination of origin Terra di Bari accompanied by the geographical “Bitonto”, must have the following characteristics:
– Color: green-yellow;
– Smell: medium fruity;
– Taste: fruity with a hint of fresh herbs and slight bitter and spicy;
– Maximum total acidity of not more than 0.5 grams per 100 grams of oil.
When released for consumption the extra virgin olive oil with denomination of origin Terra di Bari accompanied by the geographical “Murgia of Trulli and Caves”, must have the following characteristics:
– Color: golden yellow with green reflections;
– Smell: light fruity;
– Taste: fruity with fresh almonds and a hint of bitter and spicy;
– Maximum total acidity of not more than 0.6 grams per 100 grams of oil.
The extra virgin olive oil Terra di Bari PDO is ideal to accompany the dishes of Mediterranean cuisine: pasta, vegetables, legumes, salads, mozzarella and fish.
