The extra virgin olive oil Tergeste becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released October 23, 2004.
Being a product PDO certification requires that the entire production process must be carried out in the region of Friuli Venezia Giulia.
The extra virgin olive oil Tergeste PDO must be obtained from olive variety, Belica or Bianchera, in amounts not less than 20%; Carbona, Leccino, Holm Horn, Frantoio, Pendolino and Maurino, alone or jointly for the difference.
Olives for the production of extra virgin olive oil PDO Tergeste, must be produced in the Province of Trieste.
The extra virgin olive oil Tergeste PDO when released for consumption must have the following characteristics:
– Color: gold-green;
– Smell: medium fruity;
– Taste: fruity with medium or slight spicy;
– Maximum total acidity not exceeding 0.5 grams per 100 grams of oil.
The extra virgin olive oil Tergeste PDO, is good in the kitchen and at the table for many uses, it is certainly ideal with salads, grilled meats, fish dishes and traditional soups such as the Trieste “Jota”.
