The extra virgin olive oil Seggiano becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) which was issued on 14 December 2011.
Being a product PDO certification requires that the entire production process should be made in the Tuscany region.
The extra virgin olive oil Seggiano PDO must be obtained solely from olive groves consist of at least 85% from plants belonging to the cultivar Olivastra Seggiano and a maximum of 15% from plants of other varieties.
Olives for the production of extra virgin olive oil PDO Seggiano, must be produced in the Province of Grosseto.
The extra virgin olive oil Seggiano PDO when released for consumption must have the following characteristics:
– Color: from green with yellow tones to golden;
– Odor: fruity, fresh, clean, clean olive, with grassy notes of artichoke and secondary aromas of white fruits like banana and apple;
– Flavor: clean, clear, with herbal notes that trace the olfactory tones, bitter and spicy in harmony;
– Maximum total acidity not exceeding 0.5 grams per 100 grams of oil.
Its fragrance is enhanced especially on salads and green leaves of vegetables, legumes, vegetables cooked in pasta dishes served with vegetables, indispensable on the game, with fish products recommended by the marked taste of the sea. Interesting its use in the preparation of mayonnaise and ice cream.
