The extra virgin olive oil Monte Etna becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released August 26, 2003.
Being a product PDO certification requires that the entire production process must be carried out in the region of Sicily.
The extra virgin olive oil Monte Etna PDO must be obtained from the olive variety Nocellara Etnea present in the olive groves in not less than 65%. May compete varieties present in the area, the Moorish, the Tonda Iblea, the Ogliarola Messina, Biancolilla, Brandofino and Olivo of Castiglione, in varying percentages and up to the maximum limit of 35%.
Olives for the production of extra virgin olive oil Monte Etna PDO, must be produced in the territory of the provinces of Catania, Enna and Messina.
The extra virgin olive oil Monte Etna PDO when released for consumption must have the following characteristics:
– Color: golden yellow with green reflections;
– Smell: light fruity;
– Taste: fruity with a slight bitter and spicy, with hints of artichoke, green tomato and sometimes with notes of fresh almonds;
– Maximum total acidity of not more than 0.6 grams per 100 grams of oil.
The extra virgin olive oil PDO Mount Etna, thanks to the fruity flavor, is the ideal condiment is raw, for fresh vegetables, wild salads and bruschetta, both in cooking on boiled vegetables, vegetable soups and grilled fish.
