The extra virgin olive oil Lakes Lombardi joins the official list of typical Italian products with the certification PDO (protected designation of origin), which was released November 25, 1997.
Being a product PDO certification requires that the entire production process must be carried out in the region of Lombardy.
The protected designation of origin Lakes Lombardi, must be accompanied by one of the following additional geographical “Sebino” and “Lario“.
The protected designation of origin Lakes Lombardi, accompanied by the geographical “Sebino” is reserved for extra virgin olive oil obtained from the following varieties of olive trees in the groves: Leccino in not less than 40%; Frantoio, Casaliva, Pendolino and Sbresa, alone or in combination, in an amount not exceeding 60%. They can also other varieties present in the groves in no more than 20%.
The protected designation of origin Lakes Lombardi, accompanied by the additional geographical “Lario”, is reserved for extra virgin olive oil obtained from the following varieties of olive trees, alone or together, in the olive groves: Frantoio, Leccino Casaliva and not less 80%. They can also other varieties present in the groves in no more than 20%.
Olives for the production of extra virgin olive oil PDO Lakes Lombardi, must be produced in the territory of the provinces of Brescia, Bergamo, Como and Lecco.
When released for consumption in the extra virgin olive oil PDO Lakes Lombardi, accompanied by the geographical “Sebino”, must have the following characteristics:
– Color: green-yellow,
– Odor: fruity medium-light;
– Taste: fruity with a slightly bitter and spicy;
– Maximum total acidity of not more than 0.55 grams per 100 grams of oil.
When released for consumption in the extra virgin olive oil PDO Lakes Lombardi, accompanied by the geographical “Lario”, must have the following characteristics:
– Color: green-yellow;
– Smell: slightly fruity;
– Flavor: slightly fruity with possible presence of slightly bitter and spicy;
– Maximum total acidity of not more than 0.5 grams per 100 grams of oil.
The extra virgin olive oil Lakes Lombardi PDO is ideal for preparation of fish, in particular that of the lake (whitefish, perch, trout, pike), white meat and stewed snails.
