The extra virgin olive oil Irpinia – Colline dell’Ufita becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released on 11 March 2010.
Being a product PDO certification requires that the entire production process must be carried out in the region of Campania.
The extra virgin olive oil Irpinia – Colline dell’Ufita PDO must be obtained from olive variety, Ravece present in not less than 60%, Ogliarola, Marinese, Olivella, Ruveia, Vineyard Court alone or jointly by not more than to 40%, possibly, Leccino and Frantoio in no more than 10%.
Olives for the production of extra virgin olive oil Irpinia – Colline dell’Ufita PDO, must be produced in the Province of Avellino.
The extra virgin olive oil Irpinia – Colline dell’Ufita PDO when released for consumption must have the following characteristics:
– Color: from straw yellow to green of varying intensity.
– Odor: fruity olive oil;
– Taste: strong aftertaste bitter, spicy with a hint of tomato;
– Maximum total acidity not exceeding 0.5 grams per 100 grams of oil.
The extra virgin olive oil Irpinia – Colline dell’Ufita PDO presents aromatic and fruity flavor, this makes it favors the use of plates of a certain size, such as soups made from vegetables, tasty pasta tradition Irpina, soups, bruschetta and grilled meat.
