The extra virgin olive oil Aprutino Pescarese joined the official list of typical Italian products with the certification PDO (protected designation of origin) that was released July 2, 1996.
Being a product PDO certification requires that the entire production process must be carried out in the region of Abruzzo.
The extra virgin olive oil Aprutino Pescarese PDO must be obtained from the following varieties of olives, alone or together, in the groves measuring not less than 80%: Straight, Leccino and Toccolana. They can also other varieties present in the groves to a maximum of 20%.
Olives for the production of olive oil extra virgin olive oil Aprutino Pescarese PDO must be produced in the territory of the Province of Pescara.
The extra virgin olive oil PDO Aprutino Pescara, when released for consumption must have the following characteristics:
– Color: from green to yellow;
– Odor: fruity medium-high;
– Taste: fruity;
– Maximum total acidity not exceeding 0.6 grams per 100 grams of oil.
The extra virgin olive oil Aprutino Pescarese PDO is the ideal condiment for a balanced diet. It is suitable for all uses in the kitchen, by a dressing, preparation of sauces, for frying. In particular, it is used in traditional preparations pescarase cuisine, including the famous “soup”, a fish soup topped with fresh tomato, parsley, red pepper, garlic, white wine and fried bread.
