The Red Aubergine Rotonda becomes part of the official list of typical Italian products with the certification PDO (protected designation of origin) that was released July 16, 2010.
Being a product PDO certification requires that the entire production process must be carried out in the region of Basilicata.
The production area of ​​the Red Aubergine Rotonda PDO consists of four municipalities in the province of Potenza, situated in the area of ​​the Pollino National Park: Lower Castelluccio, Castelluccio Superiore, Rotonda and Viggianello.
The Red Aubergine Rotonda PDO is distinguished from other varieties of eggplant, not only for its unique appearance, that the nearer to a tomato, but especially for the low chlorogenic acid, responsible of the fruit, this makes means that even after cutting the eggplant does not become dark.
Its color is green at the beginning of the maturation-light orange with pale greenish, later bright orange to reddish.
The pulp has a meaty texture that does not tarnish after cutting. It has an intense fruity, reminiscent of the prickly pear on the palate and the taste is spicy with a pleasant bitter end.
The Red Aubergine Rotonda PDO may be marketed as fresh product in packs of maximum 1 kg in retinas of recyclable plastic, cardboard, or other recyclable material, with a label showing the PDO, the name and address of the producing and packaging, the product logo and the quantity of the product.
